Sausage Calzone - freezer meals


I'm part of a group of gals who get together about every 6 weeks and swap freezer meals.  Two of us have kiddos with dairy allergies and a few have nut allergies but we do pretty good to label those foods that contain the allergens so the little ones don't get sick.



 For one of the meal swaps, I chose to make sausage calzones for the group and I made a pepperoni and sausage calzone that was dairy free for the other family.  I had made these calzones ages ago and just recently decided to pull out the recipe and quadruple it.  I only needed 6 meals and ended up with 10 calzones.  Sister needs to work on her math skills a bit.


 I set up a little station of pizza dough, the sausage ricotta filling, mozzarella cheese, a flat baking sheet to roll out the dough and make the calzones and olive oil to spread out the dough.  I put the baking tin in front of me so I would make sure the calzone would fit in the tin.


I use this pizza dough recipe, mixed ricotta, cooked sausage, garlic, parsley, red pepper flakes and parmesan cheese in a large bowl.  After spreading out the dough to the desired size, on the bottom half of the pizza dough add a layer of ricotta mixture then top with mozzarella cheese.


 Fold over the top of the dough onto the bottom and fold and pinch the edges to seal them.  Using your hands or two spatulas, transfer calzone to the baking tin, add the top and write what it is, bake time at what temperature and once completed, add to the freezer.


I'm glad that I ended up with a few extra for my freezer because I have used them for a couple with a brand new baby, sent one to a neighbor who had broken her collar bone and another for a night when I seriously have no idea or motivation for dinner.

Sausage Calzones
makes 2 large calzones, serves 6-8

Pizza dough
olive oil
1 lb of Italian sausage
2 cups of ricotta cheese
1/2 of parmesan cheese
2 garlic cloves, minced
1/4 c of parsley, chopped
1/4 tsp red pepper flakes  (optional)
fresh ground pepper
2 c mozzarella cheese
Favorite marinara sauce for dipping

Preheat oven to 450 degrees.

Brown sausage in a small skillet until cooked through and into small crumbles, drain on a paper towel lined plate.

In a large bowl, combine sausage, ricotta cheese, parm cheese, garlic, parsley, red pepper flakes if using and a few grinds of pepper.  On a lightly greased baking sheet, spread half of the pizza dough to cover the entire sheet.  On the lower half of the dough, spread half of the ricotta sausage mixture and then top with 1 cup of mozzarella cheese.  Take the top half of the dough and bring it towards you to cover the filling. Start at one end and take the bottom dough and fold up to the top of the dough and pinch to close.  Go around the entire calzone to make sure all the filling is safely secured and won't ooze out when baking.  Transfer the calzone to another lightly greased baking sheet.  Take the second half of the dough and make another calzone using the same steps as above.  Transfer that calzone to the baking sheet with the first calzone and place in the oven.

Bake for 20-25 minutes until golden brown.  Warm up your favorite marinara sauce and serve on the side.  Cut each calzone into 6 slices and serve.

**You could also take the second calzone and wrap it in plastic and aluminum foil before baking and place it into the freezer for another day.  Take the frozen calzone out of the freezer, defrost in the fridge and then bake as directed.  You may need a few extra minutes if your calzone is still a little frozen in the middle.

Christmas dinner

The other night was the annual Ladies Christmas Dinner at Crossroads Bible Church. I usually host a table with my mother-in-law and we decide on a theme and run with it without going garishly over the top.  We ended up doing a winter white theme with these really cool frosty plates from Pier One and white dishes to accent.  I have no idea as to why I have no pictures from that evening as I had my iPhone, but alas, I took no pictures.
I did get to sit at the table with my mother-in-law, Mike's grandma and my lovely friends from our home fellowship group.  Some of these gals are friends that I have known almost as long as I have lived in Washington and others are newer friends.  I am super blessed to know each one of these ladies.  It was a fun evening to chat with one another without our passel of 21 children asking us questions, requesting food and needing our attention like they do every other Friday when we get together for bible study.


We had a yummy dinner and then fun entertainment courtesy of the local Christian university's jazz ensemble. I am thankful that this year we were able to eat dinner together and begin our Christmas season together.

Every year, Crossroads Bible Church hosts a Ladies Christmas Dinner for an opportunity to bring friends and family who may not know the true reason we celebrate Christmas. My mother-in-law and I have hosted a table for a few years and this year had a little hitch. We still hosted a table, but my mother-in-law ended up doing the bulk of the work due to my ill behaved children.

Our church is very blessed to have kitchen facilities and a wonderful lady who has a fantastic team that made our very delicious dinner. Our theme was blue, white, silver with snowflakes and the evenings gift was a ceramic loaf pan filled with chocolate topped shortbread cookies. After our meal, we were entertained by The Three Wisemen and one of the wisemen is our very own worship leader, Timothy James Meaney.
It was a wonderful evening of seeing various tables decorated, seeing friends I hadn't seen in awhile and meeting new people as well. The evening is usually one of the first parties of the season and I'm glad I get to be a part of it.

Day 333


I have a budding chef in my house who likes to assist with making dinner if he is in the mood. It's pizza night and we are making calzones. I'm the one in the family who likes mushrooms so those were on my side and Andy was being very meticulous on where the cheese needed to be placed. I enjoy my help and hope this assists him in making good nutrition choices and developing a love of cooking.

Tonight's dinner was brought to us via the Internet and a good old fashion cookbook. I need to go grocery shopping in the absolute worst way, but I'm cleaning out my pantry and using what I have to make my version of cheesy rice, chicken and broccoli casserole and sour cream and dill biscuits. Since I no longer use the cream of sodium soups, I found a recipe online that is a great substitute. It's also another cookbook I would like to have too.

Tonight we had the rare privilege of having some good friends over for dinner and an overnight stay. Nate and Judy are with Campus Crusade at Central Washington University in Ellensburg which is just over the mountains. We tried to stop by and see them last summer when we were camping in Eastern Washington, but alas they were actually on this side of the mountains. Mike and Nate have been good friends for many years and we also got a tasty treat of Mike's ribs.

Day 171

Happy Father's Day
This evening after Mike and I returned from our little getaway, we celebrated Father's Day with Mike's family. His brother, sister-in-law and nephews joined us at his parent's house for dinner and some family time. I wanted a picture of the three generations of Sorensen men to commemorate the time together. Obviously, this picture was taken at the end of the evening as little sour puss on the left was tired and ready to go home and sleep in his own bed. He's so not my child at all, haha.

Now that Mike is back in town and I have this great new stove, I am back to cooking for the family. I got a great deal on leeks at the farmer's market on Wednesday and I turned those leeks into Leek-y Chicken with Rice. It only took about 20 minutes to make dinner which is always a plus in my book.

Tonight I went out for dinner with a few of my girlfriends to celebrate my birthday. We went to Pallino for a casual, Italian dinner were we could just grab a table, order what we wanted and just hang out without having to worry about reservations. We had such a good time that we closed the place down. I am super blessed with the group of women God has given me as friends.

I was trying to figure out a picture for today and since it's late, my creative juices started flowing. I thought I would try out one of my settings on my camera and chose the illustration mode. My subject is the bottle of wine I added to my chicken piccata and then we finished it with dinner. One thing I learned is I need to pull out the tripod as with this setting, it does take a while for the camera to do it's thing.

Day 12



Yummy, dinner! My mom and grandma make a mean pot roast, but alas, I don't have a dutch oven in which to cook mine. (Hint, hint, for those needing gift ideas) So, I cook mine in the crock pot and it is delicious. The meat is flavorful and falling apart and the leftovers are the best part. I use the leftovers for chimichanga's, beef curry or just a sandwich the next day.

Speaking of dinner, it's time to make the mashed potatoes and veggies.
